Prep your sourdough discard tortilla by cutting or slicing a slit at the bottom part up to the middle. This is needed for folding the tortilla.
Combine your arugula, olive oil, and lemon juice and mix until all leaves are dressed coated well.
Imagine dividing your tortilla into four quadrants and start assembling your wrap. Start with placing the slices of brie on the lower right quadrant of your tortilla. Moving clockwise add the dressed arugula, then the slices of ham, ending with the strawberry raspberry Jam on the upper right-hand corner.
Start folding your tortilla with the arugula side over to the ham, then the jam, and lastly the brie cheese.
Once your tortilla is ready, place it on the grill and watch the brie just melt transform into its delicious gooey state. Once brie is melted enough, flip to heat the other side until you get a nice golden color on the tortilla.
All that’s left to do is to plate and serve.

Tips:
As you are folding up your tortilla, make sure that the arugula is sandwiched in the middle of all the other ingredients as to not wilt the beautiful greens. Also, make sure that you have the brie on the outer side of the wrap so when it’s time for the panini press, the cheese melts perfectly. If in the event that you do not have a panini press at home, you can use a stovetop grill and use a pan filled with beans to press on the tortilla panini. A brick covered in aluminum foil can also be used as an alternative.
Notes:
If brie is not your cheese of choice, you can always substitute it for other soft cheese that you may like. A Camembert or a nice bleu cheese would also taste good with this deli tortilla. In the matter of meats, if the ham is not for you, a good alternative that we like is the Coppa Piacentini. You can also use Prosciutto in place of the farmer’s ham for the saltier flavor.If a grill is not available, a hot non-stick pan will also be good for heating and melting this tortilla wrap.
