Watermelon Popsicle Recipe is a simple alternative to ice cream, perfect on a hot summer day, and one of those easy recipes to get us all to eat more fresh fruit.
Cut or scoop out the juicy watermelon and add to blender. Blend watermelon on high and strain out the seeds. Once strained, you will want this to look like watermelon juice.
Fill cavities a little more than half full.
Add cocoa nibs if you'd like to make it look like there are seeds. Place in freezer for one hour
Mix together yogurt and sweeter. Pour mixture into the mold.
Mash kiwi with a fork
Remove molds from the freezer, add yogurt mix. Freeze for 45 mins then add kiwi.
Add the popsicle stick into each mold and let freeze until solid for a minimum of 4-5 hours.
Remove Watermelon pops by placing popsicle mold in warm water for a minute or two to loosen the popsicles to make it easy to remove. Do not fully submerge the mold. Only place in water until just under the top of the exposed pop.
Strawberry Watermelon Popsicles Remove 1/4 cup of the watermelon and replace with 1/4 cup of fresh or frozen strawberries. You can add a bit of fresh lime juice and 1/8 tsp of lime zest to brighten the flavor. If you do not have limes on hand you could also use fresh lemon juice in a pinch.
