We absolutely adore lemon in this house, well at least my son and I do! And this Easter Lemon Poppy Seed Bundt Cake is perfection. It is perfect for springtime and perfect for your Easter Brunch Menu.

Every year my son asks for something lemony for his birthday, anything from lemon bars to lemon cake hits the menu. This year since his birthday falls on Easter, so I thought that this would be a perfect pair.
Lemon poppy seed cake is much easier to make than you might think, that even the kids can make it. The only word of caution I would say is to make sure you double-check or have the kids double-check that the pan is greased well. , as bundt cakes can stick pretty easily to the pan.
Poppy Seed Cake Ingredients
- 1 1⁄4 cup cake flour
- 1 1⁄4 cup butter, softened + extra for coating pan
- 3⁄4 cup sugar
- 1⁄2 cup flour
- 3 eggs
- 1⁄4 + 1/8 cup milk
- 2 tbsp lemon juice
- 1 1⁄2 tbsp poppy seed
- 1⁄2 tbsp baking powder
Lemon Glaze Ingredients
- 1 cup powdered sugar
- 4-5 tsp milk
- 2 tsp light corn syrup (optional)
- 1⁄4 tsp fresh lemon juice
Additional Items To Top The Cake
This is a really fun cake to make and the kids can go to town decorating it.
You can use this recipe any time of year, just leave off the Easter Bunnies.
Recipe For Lemon Poppy Seed Cake
- You will want to make sure to mix together sugar and butter until creamy. If the kids are going to do this part, I would use a hand mixer and have them turn the hand mixer on low before they put it into the bowl. Then add to the bowl slowly. This will keep all the ingredients from flying all over the place. My daughter taught me that because I was the messy one
- Crack the eggs in a separate bowl to avoid shells. Then add eggs and lemon juice to the mixture and blend
- Combine the cake flour, all-purpose flour, and baking powder. Add to batter. Add milk and the poppy seeds. Then blend until thoroughly corporated
- Butter bundt cake pan well
- Pour batter into bundt pan
- Bake 350 for 40 minutes or until the cake tester comes clean.
- Leave in the pan, set on a wire rack to cool
- Meanwhile, prepare the glaze by combining confectioners sugar, milk, lemon juice, and corn syrup. Set aside
- With a spatula, carefully separate the sides of the cake from the cake pan. Flip cake onto a wire rack and allow to thoroughly cool before icing
- To decorate, drizzle glaze back and forth over the bundt cake. Quickly place bunny candies around the cake before the glaze hardens and sprinkle nonpareils over the top
- Slice and serve. Enjoy!
Soak Poppy Seeds Before Baking
If you want to avoid the tougher texture of the poppy seeds, you can soak them before adding them to your cake.
Allow to soak for approximately thirty minutes.
Adding Lemon Flavor Into A Cake
Is a perfect way to add a little zing to your cake. Sometimes depending on the recipe and which fresh lemons I can get my hands on, we will add a little lemon zest as well.
How To Freeze Easter Lemon Poppy Seed Cake
After making the cake, allow it to cool completely, then I wrap it in plastic wrap tightly. Then one more wrap in plastic wrap.
If you do not have space for the entire cake in your freezer, you can also slice it into individual servings and then wrap each serving two times in plastic wrap like above.
How Long Will The Bundt Cake Recipe Last?
You can keep it in your refrigerator for up to five days.
It can be stored in an airtight container at room temperature for up to three days on your counter.
