Choose ripe bananas for banana bread
One of my favorite things about this recipe is that you can make it anytime you have overripe bananas. I like to use them when the bananas are overripe and not from the freezer. I think the recipe takes on a much different flavor if you freeze your bananas.
Other banana bread recipes that I have tried have all been too complicated. You need a stand mixer, tons of ingredients and do not have a good banana flavor. But not this one, it is full of flavor.
I wanted to make something that was a comfort food, easy, shaped well in the pan, it’s good as a breakfast food or as a dessert. I was also looking for something that did not require a stand mixer or multiple bowls. The recipe needed to be quick and easy with amazing flavor.
After trying multiple recipes that I just did not love. I asked my mom and grandma for the recipe that they used when I was a kid. It took some convincing, but I got it!
I have had this recipe now for over 20 years and my kids and husband go crazy when I make it. I have made it for friends after they gave birth, bought a home, Sunday brunch and everything in between.
Normally, I would develop the recipe myself and tweak it until I got it just right. But this one was already great!
Ingredients
- 4 cups flour
- ½ tsp salt
- 2 tsp baking powder
- 2 tsp baking soda
- 1 cup butter
- 2 cup sugar
- 4 eggs
- 2 tsp vanilla
- 2 cup mashed bananas
- 1 cup 7-up
- ½ cup chopped walnuts

How To Make Quick Banana Bread with Walnuts Recipe
Preheat oven to 350 F
Sift together the flour, salt, baking soda and baking powder.
Cream butter and sugar in a large bowl.
Add one egg at a time into the creamed butter and sugar bowl. Beat after each addition of egg
Add vanilla and bananas to the creamed butter and egg bowl
Add dry ingredients to the creamed butter bowl. ¼ of the dry bowl at a time
Add ¼ of the 7-up and mix
Repeat number 6 and 7 until all ingredients combined
Fold in nuts
Grease two loaf pans. I prefer Crisco (But you can also just line with parchment paper like I did)
Fill each pan evenly
Place in oven for 50 minutes or until done. Fork in the middle comes out clean
EXPERT PRO TIPS
Be sure that you line your bread pans with parchment paper and not wax paper. If you would like to conserve the amount of parchment paper that you use, you can grease the pan and only line the bottom with parchment. Lining the bottom will ensure that the bread holds the shape of the bread pan. If you are not concerned about the shape you can line the entire pan in parchment. I prefer that method as it is a quicker process.
